Well spotted. I think there is either two ways to spell it or it is commonly misspelt. But yes the most common way is Saision.

Just a little bit of news on this recipe. It's been published in a book released this week. I've yet to read the book but Homebrewtalk gets a mention. The Author is a member of the board. I'm sure he'll share the details. I hope to brew the recipe early next year at a commercial brewery...

I'm glad to see this recipe is still being brewed. and developed. For those interesed there is a book being published later this year that includes this recipe (and a couple of others) I'm sure the Author will share the details on here at the time of publishing.

Drinkable yes. At it's best? probably not. It'd be a shame to kill the keg at day ten but if you have no alternativr then it's not a bad option. Some comercial micro brewers are sending beers out at day five but then they are cellar conditioned for up to a week.

Read all the books from 20 years ago and it was the way to go. My take: if you don't have enough knowledge or experience to decide for your self and do not have a guru you can trust then go to secondary... Experiance will let you know if it's worth it or needed. Certian types of beers will...
