Heady Topper- Can you clone it?

Anyone know a sufficient substitute for Apollo hops? Every substitute chart I have seen doesn't even include Apollo.

    What's wrong with my gravity?

This is the kind of outside the box thinking I love about this forum. Question though: Did you pitch new yeast? Did you move the cake with it? Did you just go with whatever yeast might have still been suspended in it? Curious to hear more.

    What's wrong with my gravity?

Can I keep this beer alive with some Brettanomyces? Maybe give it some funk and some time? Thanks for all the advice. This thread is helping me a ton. Unfortunately, I don't keg yet which is why the high FG is such a tricky thing.

    What's wrong with my gravity?

I am using a glass hydrometer. I have checked the hydrometer to insure a zero reading in plain water. What about the idea of adding some form of sucrose at this stage to get the gravity below 1.025? Anyone tried this yet?

    What's wrong with my gravity?

I recently brewed an Imperial Red. It clocked in at around 1.072 on original gravity reading. A ten-gallon batch. My malt bill looked something like this. 12 lbs 5.0 oz Pale Malt (2 Row) US (2.0 SRM) 11 lbs Marris Otter (2.0 SRM) 2 lbs 9.6 oz Caraamber (30.0 SRM) 1 lbs 15.1 oz...

    Filtering my Beer

I don't have a controlled fermentation, so I can't perform a cold crash. And even if I did that still wouldn't answer the question which is 'do paper filters work or not?'

    Filtering my Beer

I'd be interested to find if anyone has gone this route ever since this discussion? I can't afford a filtration system since I'm not CO2 capable yet, but goddamn, my dry hopping is ****ing cloudy and vegetal. Anymore thoughts?

The gravity on my beer went up!

These are hydrometer readings. I didnt note the temperatures when I took the readings, but I would say the temperatures were roughly the same (I live in Long Beach and it's kind of always 65 degrees around this time of year). This was an all grain recipe for an Imperial Stout in which I failed...

The gravity on my beer went up!

I made a Stout that had an original gravity of 1.070. Primary fermentation was successful up to 1.020. I reracked to a secondary to add some Oak Chips that had been soaking in Bourbon for about 6 months. The oak aging occurred for two weeks. I went to bottle last night and found that the FG was...

Question: White Labs Belgian Sour Mix I

A couple quick questions for anyone who has used this blend: 1) How long should the secondary fermentation continue for before bottling? I performed primary with WLP 001. I pitched this blend 10 days after primary, and it's been about three weeks. 2) If I do decided to bottle after only three...

I am in the market for an O2 cylinder, regulator and oxygen stones. I'm hoping to get these as cheap as humanly possible becuase, ya know, this **** gets expensive. Anyone have any tips on where to acquire these goods on the cheap? Anyone have insight on brands to use or stay away from? Mistakes...
