    After aging 6 months I added sugar and bottled today. The sweetness is just beginning to show. I could probably have aged this another 6 months and it would be better. If it turns out the way I hope I may buy a new 5 gallon carboy and put some on a shelf for a year to see.

    Pre chiller

    I'm in Georgia. My tap water is fairly cool. I'll start with a chiller then see if I need a pre chiller. I've been sticking the pot in an ice bath. Hopefully a chiller will be better than that. If I do an ice bath and a chiller that should help. Thanks

    I'm still doing five gallon extract batches. I'm about to get a wort chiller. How much would a pre chiller help at this level? Seems like a lot of money for possibly little result. Do I really need a pre chiller?

    I may have a hole in my hose. I'll check that first. I got the hose from my LHBS, and it is a TIGHT fit.

    Auto Siphon

    Bottled today. My siphon kept stalling. My carboy was higher than my bottling bucket. I would pump the siphon and it would start and run for about a minute, then it would trickle, then stop. Is there a trick to this or do I have a leak?

    Pastuerized is fine. You can even have asorbic (sp?) acid, basically a vitamin C additive. I've used Mott's, Kroger brand, Walmart brand, and frequently up the abv with Seneca frozen concentrate. I've had great success and love the stuff. It can get rocket fuelish if you push the envelope...

    Cranberry Cider - Based on Ed's Apfelwein

    I did a batch with cranberry and pomegranate juice added about a year ago. It ended up being really strong, and really tart. Its still close to undrinkable unless I add some sprite. The limeade might make it really good though. Good luck!
