Can it be too cold where my primaries are?

I've got a wheat sitting in my primary and a stout in my secondary, both carboys are in my basement covered with towels. The wheat I made last Saturday and I still have a large krausen covering the top although little activity in the airlock. The stout on the other hand is been sitting for a...

    Fementation question

I have a Irish stout I made on Saturday afternoon and used the yeast starter that I made on Wednesday. By 1am Saturday I had a nice krausen and the airlock was bubbling like mad. Monday morning before work I head down and there is no activity in the airlock and the krausen dropped completely...

    Long fermentation?

I started up a Oktoberfest batch on 9/22, left it in the primary about 9 days and then transferred to the secondary. Last Saturday I planned to bottle so I took my FG and it still read high, 1.20. I go back down the next day to check on it and lo and behold, I've got bubbling in the airlock plus...

    Managing carbonation

Had a question regarding carbonation levels. I've been using the standard 5oz of priming sugar when I bottle and my brews have what I think is too much 'fizziness' especially with my porters and stouts which I don't really care for. Would reducing the amount of priming sugar say by 1-2ozs...

    Long fermentation?

I brewed up a Pale ale last Saturday. Went down to check on it Sunday morning and there was no krausen, no bubbling in the fermenter. Checked later that day and still nothing so I gave the carboy a couple gentle shakes. By that evening, I had a nice thick krausen and steady bubbling every 5-6...

    Adding water to the secondary

Not sure what I did but after filling my primary, I evidently misjudged how much I lost during the boil (started with a 6 gallon boil) and it wasn't until the next day I realized I am well under 5 gallons in the primary. Has anyone ever added more water when moving to the secondary or should...

My first stout- should I do a secondary?

I'm making my first stout and am wondering if I need to rack it to a secondary or just leave it in the primary and then bottle when ready? I've only made ales up to this point so am not sure if stouts or porters benefit from racking to a secondary.

    No krausen

Made a wheat yesteday and this morning, no bubbling in the airlock, no krausen, appears to be stuck. I shook it up again this morning and placed it in the garage where the temp is about 65. Any suggestions?

    Boiling question

Greetings and Salutations I've rather new to the homebrew hobby and am enjoying it immensely. Have made several batches thus far and they have ranged from very good :mug: to complete disasters. Currently I am boiling about 2 1/2 -3 gallons in a 5 gallon pot on my stove but from what...
