A young scientist from Hungary/Transylvania achieved to malt the einkorn wheat in the micro malting equipment of the Corvinus University of Budapest. The publication is available here...
We brewed einkorn ale using unpealed and pealed einkorn grain with some enzymes. Because of the fine hops used during the brewing, the taste is as well perfect :-)
