Cider Newbie - cider pressed...now what?

Update: fermentation is active, but slow. I raised temp to 58 over several days. Today wife complained of sulfur smell so I added 2 more tsp of Fermax. Gravity is only down to 1.039. So it’s chugging along, but slow. I’m in no hurry.

Cider Newbie - cider pressed...now what?

Update - just added pectic enzyme and pitched yeast. Temp set to 50 which is lower end of recommended by Fermentis for this yeast. Also added yeast nutrient at half the label dosage. That smelled terrible but a quick search of the forums confirmed the ammonia smell is OK. Ran into a problem...

Cider Newbie - cider pressed...now what?

Thank you so much. This is hugely helpful. I added campden just now. The whole thing is in my fermentation chamber now set at 46F (for no particular reason), so I figure that will slow down the growth of anything for a bit to but some time. this advice is great. Can I check sugar with the same...

Cider Newbie - cider pressed...now what?

Hi - I'm an experienced all-grain beer brewer, but my wife wants cider and sourced applies before I sourced knowledge :) So I have lots of brewing equipment but not a lot of cider knowledge. So the apple cart is before the horse, if you'll pardon the pun. I'm hoping a kind soul will answer...

Texas Instruments TI 83/84-based brewing calculator

Ok here's a few screenshots of where I'm going with this:

Texas Instruments TI 83/84-based brewing calculator

I've implemented Sean Terrill's refractometer calculator (http://seanterrill.com/2012/01/06/refractometer-calculator/) in my programmable TI calculator. I can make this available to anyone else if they'd like it. I'll post screen shots soon. I'm going to add a few other calculations to the menu...

Specifications and True Capacity of various 2.5 gallon kegs

Looks like it will nest probably 3/4", maybe a hair less.I don't have two of the same kind to tell for sure. I don't think you'll get an inch out of it. So two stacked should be around 28.5"

Boil kettle condenser - no overhead ventilation needed

Yes, thats what I was thinking. I have a waterwise and I may just try to hook up its condenser to a ported kettle lid and see what happens. Granted, a watewise is a 1G system, but I should be able to tell from a test if I can hook it up. The water in that system goes in at boiling and comes out...

Boil kettle condenser - no overhead ventilation needed

Any reason at a homebrew scale we couldn't just make a port in the kettle top, and run the steam through something like an aluminum transmission cooler with a PC fan attached, and basically air-cool it, and not deal with water-cooling the steam? The little waterwise water purifiers are kinda...

    Intertap beer faucets

Which adapter did you use? i'd love to have a FC faucet that attaches directly to a ball lock fitting for my 2.5g kegs in the fridge. Williams Brewing, in their Q&A section, says their adapter does not work with the FC version.

Are these OK Swing top bottles?

They won't handle carbonation (read the Q&A on the listing) but if your cider is a still cider (non-sparkling) I'd use them.

Specifications and True Capacity of various 2.5 gallon kegs

For reference for others, I did some measurements of the three different kinds of "2.5 gallon" kegs I have here. I thought somebody somewhere might find this useful. Note that some true specifications are somewhat different than advertised. I measured volume by taking empty and full weights...

    Plastic beer kegs

My company packages wine in 19 liter PET sanke legs. Try searching on PET kegs.

    Cheap SS pump

    Um that's a pitcher.

What are keg poppets? First time keg

Poppers are the spring-loaded seals in the posts. Your keg will come with them, though it's not a bad idea to have a couple spares along with o-rings.

    First biab in process

RDWHAHB you'll be fine. Most conversion happens in the first few minutes. I'd just stir it occasionally. How big of a batch? if its small enough, you can preheat your oven and put the whole kettle in there (oven OFF at this point) to hold temp.

    MoreBeer Torpedo Keg

I missed that sale, but there's a 10% off today so I pulled the trigger on a 2.5G slimline. It will be interesting to see how it stacks up against my other 2.5G torpedo.

pH changes in finished beer -- beer got sour, then improved?

... E pur si muove - Galileo I think it had to be carbonation. For whatever reason (extra cold temps?) it got more saturation than normal under 30psi, so more carbonic acid, lower pH, and more bite. When you turned down the regulator to 10, it outgassed (or you pulled a pint), and that caused...

    New BIAB brewer

I really like testing new setups on a pale ale or a saison. Both are so hard to screw up :) I just did the opposite - upsides from 2.5 into 5 g batches.

Critique my 2.5 gallon BIAB plan

You've got plenty of kettle volume for full-volume mash. I did many many such 2.5g biab in 5g pot. I usually started with 3.75 gallons. No need to sparge at all
