Texas Lager fermentation. Room Ambient 74 to 77

I know this is an old thread, but I have some experience with the FTSs system that I think could be useful to others: Ambient temps up to 77, is a little warm for a lager...but I found the neoprene sleeve that comes with the FTSs system to be pretty effective. Here’s my recommendation if you...

    Stalled Fermentation Options

A couple of thoughts: Your ABV is around 5% right now. That’s not crazy high, but I’ve read that alcohol can shock the cells of young yeast. Option 1 would be to try pitching the s-05 with a starter....give the yeast a chance to acclimate to alcohol before just throwing it in. It’s possible...

    gelatin clarification

This is an old question, but I thought it deserved an answer since I've been researching. I'm not sure specifically about it being more hazy after the gelatin. But, I do know that cider will contain pectin which can contribute a significant haze. It is recommended to use pectic enzyme to...

    Yummy Sound Sour Stout

I do have a bottle of Mad Meg from Jester King. I love Crooked Stave, but can't get it locally. May have to plan to trip to Denver soon! I like your suggestion though, I may try building a starter and stepping up the Mad Meg dregs...then adding some Lambic as well.

    Yummy Sound Sour Stout

In the absence of access to the Jester King dregs, would the Wyeast 3278 Lambic Blend be a potential good substitute? Or would the Roselare be a better fit?...or something else?

All-Grain Stone Brewing Imperial Mutt Brown Clone attempt

I'm thinking about starting my fermentation at 60º F and let it rise naturally to 70º. According to the Danstar website, this is a good temp for the Nottingham: http://www.danstaryeast.com/products/nottingham-ale-beer-yeast What are your thoughts on this?

All-Grain Stone Brewing Imperial Mutt Brown Clone attempt

I bought the last one they had last week. They had to look in the back and found one for me. I drank it this weekend. I'm hoping mine comes close to it!

All-Grain Stone Brewing Imperial Mutt Brown Clone attempt

I'm interested in the progress of this endeavor...I'm following this thread. I may try brewing your most recent version soon. I'm doing brew-in-a-bag...I don't suspect that will have a significant affect on the result though. I'm starting by adding the recipe Beer Smith today.
