    Jesus! The only issue I see is being able to control your fermentation temp. Is that fermenter jacketed with glycol?

    If you taste butter that's diacetyl that needs to be consumed by the yeast. You may have needed a bit more time in primary to clean that up. Next time pitch cooler; low 60's and I bet you will like the results better.

    Simcoe and Amarillo are very tasty. I also like Simcoe with Columbus and Cascade. You pretty much can't go wrong with Simcoe and any other citrusy American hop.

    Right on! Very cool setup. I find myself brewing a lot of 3 gallon batches too for the same reason. I like lots of variety and it just takes to long to kill 5 gallons since I'm the only one at my house who drinks it.

    Works great, probably better than the stainless braid. I've had one or two slow sparges when using lots of rye and wheat and no rice hulls. I also crush my grain very fine which tends to get pretty thick and it works well. I mash at 1.5 qts per lb which is fairly thin and that helps too.
