    Leap Year Mead 2

Just read this end to end and I'm jealous I didn't get in on this. Going to harass Big Kahuna for some of his :D Interested to see what it tastes like when you guys crack em open in about 2 months.

    I'm baaaaaack!

Hey guys I'm back. Been around lurking but not visiting as much as I would have liked and definitely not contributing like I want. Things have changed and stayed the same :) Family is growing, I'm still brewing and I still can't find enough time to brew :D Hope to contribute to the cause...

Check the recipes section. Off hand I'd say specialty brews and probably spiced and I'm sure you'll find some.

    New Belgium Brewery!!!

We take things like that for granted here. Fort Collins is only like 120 miles from me yay :). The 1554 is the best they make, but I do like the frambozen seasonal they make.

    Racking Ed Wort's Apfwelwein

Mine was in for 3 months as well (i actually forgot it was sitting in the back of the closet). I bottled it this weekend. I wanted some sparkling so I mixed it with dextrose, but I did do 2 still ones for me and SWMBO and stuck em in the fridge. I liked it, it really was just like a dry wine...

    Apfelwein questions

So I'm probably fine and will bottle but wanted to get someone else's opinion that is more experienced than me. Made a batch of Ed's beginning of March and.... I forgot about it. It is in the back of my crawlspace closet and got kind of hidden. He mentions going 6 weeks to 2 months is fine...

    Bottle sanitation

This is what I do as well, but I use a bottle rinser like this one. After the soak I rinse and then give 4 squirts or so with this filled with starsan. I let em sit for a few and just pour out any residual before bottling. Hooray Beer.
