    Does the late malt addition affect flavor at all??

    I just bottled my third beer today. I was going for a summer ale.. I used 8oz of Golden promise and then 4 pounds of Light DME.. It came out like a ipa color.. I was thinking it would have color similar to a cream ale. Any one have any ideas why it came out dark?/

    Ha more beer, nice! No i just pitch the yeast directly from the smack pack... The last time i used it, the fermentation took around 12 hours and was going crazy!! My airlock wouldn't shut up.. Bubbling about 5-6 times a second.

    I think another problem i've been having is reaching 5 gallons.. I'm always a little short of 5 gallons. So do you think that could affect the FG.. I'm always hitting right at 4 1/2.. I need to start topping off.

    I've never mashed before.. Can i mash over a stove or do i need to have a seperate container??

    I used 7lbs of Light DME.. and i steeped 1lb of maris otter grain. Used 2 oz of columbus hops... and 1oz of tettnanger at the finish. used ...wyeast 1056

    Wyeast 1056 ... The palisades 7.2aau... The saaz were 5.4aau... I'll probably cut the hops in half...

    Yeah i swirled the bucket really well too mix the yeast and wert... How would i get better attenuation??

    The temperature concept is very interesting.. I'll have to read my hydrometer and see what is calibrated for. I have been using Wyeast 1056 American Ale.. The activator kind so it is ready to pitch after i break the inner pack.(smack pack) When i cool my wert I pitch it into a bucket..Pitch...

    I just brewed my second extract brew and it came to a FG of 1.019... **Just so I have this correct..Will all disregard to off flavors, the longer it sits in the fermenter the longer the gravity will drop!** The reason i am asking is because the last two beers i have brewed.. One hit...

    Sorry i meant weeks not days.. I can't wait to crack them open. Smells amazing. Fruity and Floral.. Just hope the bitterness isn't over the top..

    So the batch came out awesome.. I bottled last night.. 39 bottles!! It was very bitter at the front but sweet at the back of the palate. I did use 2 oz of Columbus though. Hopefully that will mellow out in a few days in the bottle!!

    I have already fermented my 4 1/4 gallon beer ... So i am probably in for a heavier body and more alcohol i would think... Next time i'll make sure to hit my 5 gallon volume mark....

    cream ale...

    can i steep the grains or should i mash them?? and can the flaked corn be steeped or mashed?? I havent used either before..
