If you have too much boil hops/dry hops and they sit for too long exposed to your beer I promise you'll get grassy/soapy flavors.

You may have let it sit in the secondary to long with all the sediment. The cake of yeast, grain and hops will produce of flavors if exposed to beer to long

I'd recommend throwing in 5-10oz of honey into your bottles/keg in place of priming sugar and they carbonate and come out kinda like champagne

I've had many pros say you don't need to see bubblin to know there's fermentation so I'm gonna say take a FG and wait 48 hours and take another FG. If there's little to know change, get a bottling
