    All this is way beyond me. I understand the need for water chemistry but I just can't seem to get the hang of the so called "water chemistry calculator's". I need one does the additions for me. punt in my starting water profile, put in my target profile and let the calculator make the addition's.

    Look's and sound's really good. since you are boiling them I would not really worry about and "micro organisms". it would also be cool to fire roast them rather than freeze them, add a little smokiness to your beer.

    I concur with the others, freeze them and make a wheat beer or a cream ale. I would love to have a couple pound's to make a mead with.

    Yes, this yeast can be slow to start but once it does it finish's fast and clean. I used a fresh pack pitched dry into a 1.040 pale ale and it was going with in 12 hour's.
