Well there starts another good thread! "As long as your FG is relatively close to the predicted value and it doesn't drop for a few days you're good to go. If it's significantly higher than you expected *and* it isn't continuing to drop you may need to take some corrective action." What...

    Have I shocked my Yeast?

I pitched a Wyeast European Ale Yeast this morning at room temp (~75 deg) into wort which was about about 60 deg (I left it outside overnight!) I didn't make a starter. The wort has come up to about 66 deg in 8 hours since I moved it inside. Is this yeast gonna survive?

    Less Filling - Tastes Great!

After a 15 or so gallons of (mostly) very tasty brew, I'm finding all of my trousers have shrunk! Possibly it's my wife turning up the dryer a bit to get some extra shrinkage there, but I am now looking for a brew that is low in Carbs, a +5 ABV and has taste! Anyone got a recipe out there...

Taking the reading at 80 or 75 degrees would throw your reading off by 1.5 to 2.0 degrees. 40 could have 50 or 55 depending on the temperature of your sample. I'm new at this too, and decided not to get hung up...

Thanks Somerville. I'll certainly give that a try next time around.

    Trub

I think I'm good on the yeast. I've got about 1/4 inch white sediment in the carboy now, and the airlock is still bubbling after 4.5 days.

    Trub

Well, this is certainly encouraging news! Time to start a second batch! Thanks for the feedback.

    Trub

I mistakenly dumped the entire contents of my boil into the fermenter and let it work for three days. I have siphoned off about 4.5 gals. into a secondary fermenter and left behind most of the sediment this time. The beer is still quite murkey. How much "Trub" am I in for here, and any...
