    Can I brew this today?

I just got my lagerator set up and I feel compelled to fill it. This is the recipe I want to brew, but I have a couple questions. Classic American Pilsner 5 gal batch, 6.5 boil volume 7# six row pale 2# six row toasted 15 min. @ 300 2# flaked corn 1 oz 6% sterling 60 min .5 oz 6%...

    Wild black raspberries

Here in SW PA the wild black raspberries are getting ripe and I picked about a pound and a half. I was thinking of adding them to about a gallon of the stout that I brewed last week in a seccondary fermenter. I don't have any experience with fresh fruit and I am worried about contamination...

    starting my starter

I want to revive some california common yeast, w2112 I think, from bottle sediment. Would the sediments from two 16 oz bottles be enough to innoculate a 2qt starter? Also, should I wash the sediment with sterilized water or just pitch the slurry right from the bottle?

Do I need a protein rest?

What would happen if I use this grain bill without a protein rest? 7# Briess 6-row pale 2# flaked maize 1# Weyermann munich From what I read the protein rest is needed for more than 25% under-modified malts and adjuncts and the corn is less than 20% of the grain bill. The 6-row has high...

    Is this ESB?

Greetings, This is my first all grain brew and I couldn't have done it without this site. Thank you for all the help. It started as,what else, Ed Wrt's HPA. But this is what I could get at the LHBS: 8# Two row Pale 2# Vienna 1# Crushed Crystal L49-64 cascade pellet hops 1oz at 60 min and...

    Minimum grain bed in MLT?

I plan on doing 5 gallon AG batches and already built a 5 gallon round cooler MLT. I also have an unconverted 48qt rectangular cooler. Can I use the 48qt cooler for "big" beers with large grain bills or do I need to find a 7.5 gal cooler?

    Thermometer question

I have a quick question. If I put a room temperature floating glass thermometer into boiling or near boiling water will it break? Is it better to put it in the water at the start and let them heat together?

    safe to bottle?

I thought I was ready to bottle my IPA, 3 hydro readings of 1.006 but the air-lock is still bubling about every 2 min. is this just co2 coming out of solution or from the yeast cake? It has been in there for just over 4 weeks. I want to trust my hydrometer but I have visions of bottle bombs...

    manifold v.s. false bottom

I want to build a mash/lauter tun with a 5 gal. rubbermade drink cooler but can't decide between a manifold or false bottom. I'm comfortable with fabricating something and not worried about price. What are the merits of each one? Give me your opinions and horror stories too, I crave information.

    Clone a lost friend

I know it is a long shot, but is anyone familiar with Loyalhanna Lager from Latrobe Brewery? There has not been any since 2004 or 2005, even before they sold everything but the brewery to Anheiser Bush. I found some recipes for american amber lagers but it isn't a well defined style from what I...
