Using a big carboy for less beer?

That's what I was thinking. Just put it into the smaller one for the second fermentation. I don't plan on doing that more then 2 brews. I want to try some cider also.

Using a big carboy for less beer?

Ive been brewing for awhile and im looking into doing other things but i want to keep making beer. Would it affect the beer if i decided to make 1 gallon brew in a 5 gallon carboy? when i do the second fermentation I will put it into a smaller carboy because of the CO2 but would it affect anything?

http://www.midwestsupplies.com/liberty-cream-ale-kit.html That's the link to what i was suppose to make. So far i have comments of it being the bomb to it tasting tarty. The only thing everyone can agree on is that they are surprised i have little to no sediment in there.

    Grain

I have the basics down. I've used a gallon recipe then I bought the pieces for a 5 gallon set. Most websites tell me the gravity and degree of the grain but none really say if I can just use general grain for a regular beer. I do understand that there are many different kinds of grains out there...

    Grain

Random question. I am new to brewing and I'm trying to brew from scratch so I can learn better. Is there specific grain (I.e just for brewing grain) or can I use any grain. Like something from a farm store? Just a new guy trying to do this right Thank you
