    If you ordered the kit online then many reputable suppliers will also link to an online copy of the instructions, you may want to check where you purchased the kit from. Otherwise, I'll hand it off to other commenters who may know better.

    Crap it happened again

    I wish I could find the links again, but I don't think it's an infection. Likely a yeast residue. I've noticed it mainly on my ciders but occasionally on my beers. Never seems to be a problem after bottling.

    How many lbs have you gain since you started home-brewing?

    I went through a weird lifestyle change where I cut out most everything else (junk food, etc) started exercising more, but also brewed and subsequently drank more of my own brew. I'd like to think I'm healthier but I think I just evened out to where I was before.

    Is "your beer is so clear" really a compliment

    It may be a stock compliment, but a compliment nonetheless. I've met a few brewers who can't get anything clear looking if their lives depended on it, not to say that their brews were bad at all. It may be a point of pride that they one day hope to emulate and feel compelled to remark upon.

    New Bern Homebrew

    The guy seemed to know his stuff or, in my case, had a couple cheat-sheets behind the counter to help me pick out a suitable yeast for a custom recipe. That aside, the small selection was somewhat off-putting. Hoping he picks up business, because it feels like I'm more well equipped then they are.
