Ok, this maybe a silly question but I tasted an award commercial winning ginger beer yesterday and thought it tasted like a homebrew pale ale with ginger flavouring.
(A Morgans ginger beer kit brew tastes better but is not light and malty with a beer taste.)

I live in Brisbane, Australia and all my fermenting seems to hang around 28 deg C.
This seems very hot and I'm concerned that this may impact flavours etc.
I don't want to invest in a frige.
Any thoughts or ideas?
