    Yeast for a cyser

I have used S-04 for several cysers, but not with and ABV that high. I think the highest OG I did was 1.080 and it worked fine.

How crucial is room temperature while fermenting

I put my primary in a large plastic bucket that is filled with water. It's one of the 'party' buckets that you fill with ice and sodas that you can get at Walmart for like $10. This gives your fermenter a large thermal mass that won't fluctuate with room temperature nearly as much. Even with...

    Light Lemonade Mead

Started a 3 gallon batch this weekend but added 1lb of blackberries and I used S-04 yeast.

    Forgive my technical ignorance...

You will need to order all the pieces you need. There is a handle attachment and a threaded receptacle, like a nut, that the rod threads into. There are many ways to do it so it is hard to point you in the right direction, but McMaster likely has all the stuff you will need.

    Forgive my technical ignorance...

That is a threaded rod, often cut with what is called Acme threads. http://www.mcmaster.com/#general-purpose-acme-rods/=pfmz8y

    Estimating sugar added by fruit

I just made a blackberry cyser. 3 Gallons pasteurized apple juice (Kirkland) 3 lbs wildflower honey 1.5 lbs frozen blackberries added in the primary Safale S-04 yeast SG: 1.085 2 weeks in the primary and it is barely bubbling, maybe once every couple minutes. Gravity says 1.030 but I thought...

    Light Lemonade Mead

Curious about how this turned out? This recipe is on my short list and I would like to use S04 as well.

    Caramel Apple Hard Cider

I used brown sugar because I thought the residual butterscotch flavor might compliment the caramel. I think it tastes great!

    vacuume degassing question

How would you collect the methanol once it evaporated?

    vacuume degassing question

The theory is certainly sound. You would need to be able to control both temperature and pressure simultaneously pretty accurately. http://en.wikipedia.org/wiki/Vacuum_distillation

Ideas for sweet blackberry apple cider

    Mmmm. Bug juice! Looks good!

    Apple Pie Cyser

Do you need to pasteurize to prevent bottle bombs? It seems like 2 cans of FCAJ and 1/2lb honey would be quite a bit of sugar to just carbonate. Sounds very tasty though!

Has anyone tried pasteurizing in a cooler?

    Should work just fine.

    Apple jack hack?

I just made some from a batch of apple cider I made that I wasn't too enthused about. I put it in 2 liter soda bottles, filled them about 3/4 full then into the freezer for at least 24 hours. Once totally frozen I inverted it over a big Gulp cup and let it drain for about 20 minute. Each 2...

Ideas for sweet blackberry apple cider

I would rack right onto the frozen berries and give it a few weeks to infuse. Then rack again to let clear and drink! I just made a 5 gallon apple cider with 3 lbs of orange blossom homey and 3 lbs of frozen blackberries added in the primary. OG was 1.060. Fermented for about 2 weeks then...
