    Hop Allergies

I think after brewing for well over 25 years I have discovered I am allergic to certain levels of hops. Had a very good Mosiac IPA from sarnac last night. It's a 75 IBU beer and I got a coughing fit and sneezing and runny nose from it. I've had a sneezing fit before from smelling hops before...

    Keezer build

Inspired by the how to build collar for a keezer I built this project for a friend. He wanted to have 4 taps with in his mancave with the keezer in his garage. The taps are 12 feet from the keezer so this is what I designed and built for him.

    Safale WB-06

Anyone use this dry wheat yeast Safale WB-06? Made a starter two days ago, not getting the usual top crop of yeast slurry like I get with white labs or Wyeast ger wheat yeast.

    motorized schmidling maltmill

Finally got rid of the drill and motorized my schmidling maltmill. Used an 1725 rpm motor with a 1.5" pulley diameter on the motor and a 5" on the geared mill. This gives me a mill speed of 517 rpm. Crushed 30.5 lbs of grain in 3 mins! that's a throughput of 10 lbs a min! Always liked the...

    IPL (India Pale Lager)

I was inspired by a Sam Adams IPL I just had last week. Shop is great for Lager ferments right now. Adapted my Czech Pils recipe by changing the grain a little and added all IPA style hops. Nugget, Cascade, Amarillo and Citra are what I used. Racked on a Czech Pils yeast slurry that had just...

    Lagering times

Drinking my "green" Helles, it's been 4 weeks since it was brewed. Only has been lagered in the keg for 1 1/2 weeks. I forgot it usually needs at least 4 weeks of cold lagering to get that really clean crisp grain taste. How long do you usually let your lagers age after primary till you start...

    step infusion efficency

I've been doing single infusion since getting back to brewing in May. Decided to do a step infusion only not as many steps as I used to do. Brewed a Czech style Pils that used the 1st rest at 142 degrees for 20 mins, I then raised it to 155 deg for 20 mins and then did my mashout at 170 deg. I...

1st Lager in a long time

Brewed a Munich style Helles yesterday. The 1st Lager in quite a while for me. Made a 2 1/2 gal starter with the WL820 for 24 gals of brew at room temp. Pitch it last evening around 7:00 at 75 deg. It's now slowly starting to ferment at a very nice 52 deg. Can't wait to try this beer in about 6...

    12 yr old Eisbock

I had two carboys in the basement for 12 years. The airlocks had gone dry and I didn't know what to expect of the beer. Nothing was growing on top and it was in the secondary. Being it was an 11% Eisbock I thought it might be okay. Tasted it two days ago and was very surprised. It had survived...

    210 beers bottled tosday

Bottled the most homebrew ever for me in one day. Used a tube and bottle stopper with picnic tap on a keg to bottle 210 beers today of Biermunchers Bluemoon clone recipe. Glad I'll probably never bottle that many at one time again! Have to say though the set up works fairly well once you get the...

Looks like my brewing days are going to be suspended for a while. My wife called me at work around 3:00 yesterday. My Garage, Brewery, Workshop burn't to the ground yesterday.
