    My wife got me a couple of extract kits for my birthday. They've been sitting in the basement for a couple of weeks (65 degrees). One of the yeast packs was already swelled when I opened the kit, package date is 4/14/08. Is it safe to use?

    I'm halfway thru brewing a Witbeer extract (kit) and just realized that whoever put the kit together forgot the yeast :( . I have two packs of Lalvin EC-118 wine yeast in the fridge. Can I use one or both of them?
