    Cider pH

    Here I'd like to tap into some of your experience guys..I've read (in the few books I can find-on cider - not much out there though) that the ideal pH for a cider fermentation is from pH 3.1-3.5. I haven't seen much info if any on the forum regarding this point. Do you cider folk just ignore...

    A quick question from a relative new-comer to cider brewing..some of you guys seem to go to extreme lengths keeping the cider fermentation at a controlled temperature.I keep mine at a max 24°C (75 F) for primary is that too high ? what defects could this cause and what are the best temps for...
