Raspberry Ale tasting sour in secondary despite sanitizing and boiling puree

I agree. Sour good or sour bad? I've done quite a few fruit beers (last one being 6 months ago a wild raspberry wheat). A good rule of thumb is to always wait it out and see what happens. However, Keep an eye out for infections and immediately keg/bottle if you suspect one. I've made fruit beers...

What is this film on top of my beer?

How does it taste/smell? doesnt matter. If it tastes bad and smells bad bottle or keg it anyway. It may turn out fine. If its tastes bad later, consider it a learning experience. In my opinion (and based on my opinion-not knowing the recipe, additional information), I'd bottle/keg and see...

    Head space

Determining how much headspace is too much or too little is really difficult as opinions differ and additional factors (type of beer, yeast, etc.). Too much seems to be a factor for potential oxignization as there is more room for oxygen (if you continually open the fermenter over a period...

    What is a Session IPA?

Ive been to backcountry (my brother lives near there). There were hit or miss in my opinion and those that were with me. Now broken compass in Breck was awesome. I get what you are saying though and it is interesting.

    Lower than expected efficiency.

Wow aggressive, Doug. biab is only all grain if it is in fact all grain. Not all biab is all grain if extract is used-as is common is in biab. We don't know the supplies so we don't know if extract was used. Yes, I may have unconsciously implied biab was not all grain. This was not my intention...

    What is a Session IPA?

I agree. A "lower" abv ipa that is really just a hoppy pale ale. Not a big fan of the term myself. Seems like a marketing gimmick to get more people to like ipas but to me it's a facade. People should embrace ipas as they are. But hey, if it gets more people try different beers, the more power...

    Lower than expected efficiency.

You are correct. But this methods effectiveness is debatable. i did biab for 2 years before jumping into all grain. I would not suggest the full volume. I did this for a while and switched. Felt like I got better effeciency when conducting the brew like all grain session with sparging. But to...

    Lower than expected efficiency.

That may be the problem here are some links: https://byo.com/stories/issue/item/2815-oatmeal-stout-style-profile http://www.madalchemist.com/archives/mashing-the-perfect-sweet-stout/ https://www.homebrewtalk.com/f36/water-grain-ratio-44594/

    Lower than expected efficiency.

That ratio is too high in my opinion. The "average" is 1-2qt/lb. Anything over or under that may lead to efficiency issues. I prefer 1.25/lb with most beers.
  10. B

    Lower than expected efficiency.

There could be tons of reasons why your effeciency is 62%. How old is the grain? What was the grain bill? What was the grain-water ratio during mash? Are you sure you measured the water volume/og right and entered in correct numbers (not insulting your intelligence)?.... I started to get low...

    very old hops

I'm cheap and I wouldnt use them. Unless it was a novelty thing like "this beer has 10 years old hops in it". But why not? Not my beer. Go for it and keep us updated!

    Stainless steel auto syphon bottler

This looks awesome. I keg but I'm interested.

    Fast beer ferment.

Still bubbling likely indicates continuing fermentation. Only time will tell. Give it a week or so and check the gravity/look for infection. That's all you can do at this point. You're probably fine. I've had super active short fermentations early on and everything turned out fine (even when...

    Worst brew day ever

Sounds like crappy brew session. Coul be worse though. After one clog(and attempting numerous ways to unclog without success), I now keep a large mesh bag large enough to hold me grain bill. That way if it clogs, I can just pour the mash into the bag (over my kettle) and carry on.

I stopped by the LHBS, wanted to buy some yeast

Yeah I've had my fair share home brew shop issues. One I was so pissed about I walked out without buying and later emailed the owner. They have since changed their practices and I now go back. All you can do is be civil but sometimes lhbs's need a wake up just like every other type of...

    Nascar! Anybody else follow it?

I'm a Stewart fan and am pretty sure he hit that dude on purpose (it's pretty clear in the video if ask me).

    Blueberry melomel question

That's awesome advice arpolis. I had no idea about the lemon juice. I did a blueberry melomel a year ago with the sweet mead yeast and it turned out great. I followed the yeast nutrition schedule. Similar to this...

    First time kegging

Make sure you have gas. I had a leak I didn't notice and a same thing happened. Went to serve and nothing. pulled keg out and shot beer everywhere. I figured it was carbed so tried again. Nothing. I looked at the co2 gauge it read empty. Why I didn't look the first time I don't know. Maybe a...

1st brew, 6 days of ferm, all is well but taste no hops...add hops?

I agree with dry hopping and waiting on the taste. It changes with aging and carbonation. My last ipa seemed only somewhat hoppy (not that hoppy though) before kegging but ended up a hop flavor bomb.
