    2nd All-grain.... yes more lessons

So I was going to post about how I pre-heated my mash tun significantly better this time over my first but decided to go a little high with my strike water because I had plenty of grain in this recipe. I dropped in my thermometer and had a good 152 mash. I checked back 10 minutes later to give...

    First AG... F***

So I mashed in at 152 which wasn't too bad- I pre-heated the tun with some water in the bath tub. Well it probably wasn't enough because after 20 minutes the igloo was in the mid 140s. I added some more hot water from the kettle that I had going which brought it up close to my 150 goal...

    Fermentation and dry hop question

So, it goes as follows- I had a great find on American hops at my LBHS so I stocked up. I had intended on making Jamil's English IPA but my boil kettle is just shy on the size so I usually get a bigger beer. This struck me as a good opportunity to make an Imperial IPA by dropping my boil...

    older ingredients and aging

So I ordered a B3 kit a couple months ago and finally got around to brewing it after the ingredients (grain and LME) were sitting at room temp for around 2-3 months. I had the hops in the fridge so I wasn't worried about them. I brewed the kit which sat on the trub for 4-5 weeks while I waited...

    Modified Imperial Porter

I bought a B3 Porter kit that I've been waiting to brew because I've had some sanitation issues in quite a few of my batches. I've narrowed the problem down to having good source water so I've relegated myself to the fact that I have to do full boils (good for getting to all grain anyway)...

    Wells Bombardier Premium Ale

I recently brewed an ESB that I thought was close to style but (at least in BeerSmith) but after much dismay in a local brew club rating and reading Jamil's recipe I felt I was quite off the mark. I decided to buy quite a few different bottles of commercial examples and have been sampling them...

    English Yeast and Crystal Malts

So, where to begin. I brewed an ESB which turned out to be more of a SB because I didn't go as dark and decided to leave out a late hop addition. 6.6 lbs LME Coopers light 8 oz Crystal 40 8 oz Crystal 60 Steeped the grains in 3 quarts of water for 1/2 hour ranging from 155 to 160...

Sam Adam's Boston Lager... as an Ale?

So, I love the caramel notes in the Sam Adam's Boston Lager but I don't have the means to lager now, especially with it being summer. Does anyone have an ale version that has a similar taste profile? I'm thinking something like this. 6.6 lbs LME 1 lb 40L 1 oz 5-7 HBU Bittering hop (60...

    Never leave the carboy unattended

So I brewed up BeerMuncher's Blue Moon Clone but I had to use WLP Hefe yeast because the LBHS was out of the Belgian strain and then because I got married I left the carboy unattended while on the honeymoon. I pulled the water bin/ wet t-shirt trick with running fan only to come home to have...

    Damn?

Ok, I did a partial mash with 1 lb of victory and 6 lbs of pale LME. I hit my FG after a week and now it's setting but I really think it needs some some crystal malt to round out the finish. Can I partial mash 1lb of crystal in a quart of water and add it to my already fermented wort? I'm...

    Using a Yeast Cake

This is the first time I've used an existing yeast cake (saving time and money rather than buying a new vial of WLP-001 for each batch) So I had a wonderful yeast cake left over from my last American Ale and decided to use it in this batch. The beer tasted fine as I racked out of the primary...

    Phenolic problems

Well damn, how to begin? I took in some beer to the LBHS for some critique and feedback and in my most recent beer that should have been a decent amber came back as having a very strong phenolic flavor and worse, I cracked open a bitter I have bottle conditioning- same thing, and an Irish red...

    papazzian suggestions

So... My first batch ever was a dubbel (I know, not the best to start with) that was in Papazzian's book and so far it's been one of my best beers. I've done late extractions since and they seem to be ok but still not as good in style as the first. I'm curious... looking for...

Pangborn Pale Ale (Drop Top Clone)

Steep grains @ 155 degrees F for 60 minutes in 3 Gallons: 8 oz of Crystal Malt -40L 8 oz of Victory Malt Bring to Boil- Add 3 lbs pale DME (60 minutes) Add 1 oz Centennial Hops 10% AA (20.2 IBU) (60 minutes) Add 1/2 oz Cascade Hops 5.5% AA (2.5 IBU) (15 minutes) Add 3 lbs pale DME...

    Grain bag re-use?

Does anybody re-use their grain bags in partial extract brewing? I've tossed the last couple hop bags I've in my all extracts because it seemed like they were too messy to deal with but larger muslin bags are around 3 bucks... seems a little wasteful to be tossing one at each batch.

    Recipe Help- partial mash

So I'm doing my first partial mash and I picked up the following: 3 gallon boil Boil grains for 60 minutes: 8oz crystal 40l 4oz victory malt 3 lbs pale DME in boil 3 lbs pale DME at knockout 1oz Cascade 60 mins 11.5 IBUs .75oz Willamette 15 mins 4.3 IBUs .25oz Willamette 5...

    Yeast "splitting"

Well, I bought a vial of WLP001 California Ale yeast and my lhbs resident says he normally just dumps his yeast into the primary without using a starter. I've made 2 starters before and I've had bubbles within 12 hours in each batch. My question is, can I make a starter from the vial a couple...

    Primary a bit tart

So I called my LHBS when my Belgian yeasted dubbel gravity sample tasted a bit tart. He said this was not uncommon and wasn't a horrible concern because of the yeast strain and beer type. My first fear was contamination but I have next to godly sanitary conditions (expect maybe when pulling...

    Weissbier conditioning question

So my first batch in the primary is a Dubbel I expect to ferment in the primary for a while because of the higher OG and then I'm going to transfer to my secondary and condition for a few weeks. Until then I'd like to brew a weissbier in my 5 gallon secondary with a blow off tube (should...

    Belgian Dubbel- hopping question

Today I brewed my first batch ever as follows. Belgian Dubbel (5 gallons) 3.3 lbs Briess Traditional Dark LME 3.3 lbs Briess Golden Light LME 1.5 lbs Briess extra light DME (recipe calls for 1.25 oz of Styrian Golding hops 6-HBU boiled for 60 minutes) Boiled extract and with 1.5...
