    Pitch more yeast?

    It has stopped fermenting in any visible manner. But now I have this white build up inside the carboy where the beer is. Not above the beer but where the beer is. Anyone have any idea what this is? It reminds me of soap build up.

    It's a 6.5 Gallon Carboy. I use it for the Primary for the extra head space and I have a smaller one for secondary.

    How long is too long in the Secondary.

    Just an update: I bottled this last Sunday and it smelled and tasted fantastic going into the bottle. I'm going to let this sit in the bottle for 3 weeks before cracking one open. They are 1 Litre flip tops. I can't wait to taste it.

    I've been busy and unable to find time to bottle an IPA I put in the secondary. It's been almost 2 months in the secondary now. Do you all think this is worth bottling at this point? It's stayed relatively cool in it's current location.

    On my first brew I pitched my yeast too early(the wort was 80+ degrees) and because of this it took days longer to get going. I would be patient. If you are really impatient like me go buy a Carboy and ingredients and start another batch. This will take your mind off of it. :)

    What's your favorite Micro brewery.

    Russian River is #1 in my book. They completely changed my perception of brewing. Deschutes used to be my favorite when I lived in Bend, Oregon. Now they are a distant second. Ever since they moved their production from Bend to Colorado it just hasn't been the same.
