    Mangos

    I did this with a batch earlier this summer using ripe champagne mangoes. My notes say I used a scant 2 cups of mango chunks in 1 gallon. It was okay, but the flavor wasn't as good as I thought it would be. Next time I'll try mango jam or frozen concentrate instead.

    Adding hops to a cider?

    I have been making hopped cider for summer and fall. I dry hop cascade pellets at a rate of 1 level tablespoon per gallon. A 1oz. package is good for about 5 gal. I usually dry hop in the primary to smooth it out. I usually don't let the hops stay longer than a week.

    Newcomer Question About Old Mead

    Interesting. I did a little checking. I didn't know that some mead recipes supplement naturally occurring sulfites with a little extra. I don't recall ever doing that. Regardless, I don't think it's worth the expense to test it. It's just a shame it's no good.
