    Extra Hard Lemonade

    With the high acid content of this recipe a starter usually helps. Use a little of the mixture at a time. Start it with like 50-50 water and your mix. Gradually add more of the lemonade mixture. This will help the yeast acclimate to the acid content.

    I will say this...they are a new store so starting out slow. Look at it this way, the more homebrew shops in town is better for us. Will bring more variety and with more competition could possible bring prices down.

    Well mine has been bottled for about 2 weeks now. Still as sweet as when it was bottled. It just totally stalled out and couldn't get it to go any further after 3 months of fermenting. Almost syrupy, but if you pour it over ice and let the ice melt a bit it is pretty good. Scarry good...

    Jonas, I'm not a big fan of really hoppy beers and with your schedule(around 35 ibu) it is closing in on pale ale ibu strength. I wanted to stay under 30. Maybe I'll up it a bit from where I'm at, but probably not much.

    So now a month into fermentation and a couple of rackings and repitches it is really rollin now. You can actually hear the fermentation from probably five feet away. Not gonna touch it now until it stops...hopefully in another week or two I can check the SG and see where it's at.
