    I decided to add canvas labels to the rest of the bottles. Not just the tags. Will write any info on the backs of the hanging tags. Leave the labels simple.

    Do you mean mead only or have you never tried different yeasts before. I have never tested mead but with ciders it changes the flavour dramatically. Its an extremely important part of brewing.

    Im only a beginner but what is the reasoning for waiting 4 days before adding more fruit? I know that people wait for secondary to preserve flavour and aroma.     Yeah will give it a go cheers. Last 3 parts of my rewarewa mead now in 5l batches. Feijoa, traditional oaked and Blackberry plus a bunch of top up bottles once I rack the fruit off in a week or so. Need to go grab some more rewarewa this week to backsweeten with.

    You can always backsweeten if to dry and the bitterness etc is to forward? Mine is taking forever. Still steadily bubbling away 6 weeks in. Surely such a slow fermentation is a sign I will end up with a stressed hot mead when done.
