    Maltier Hoppier "Yellow" Beer

    I put lagered in quotes because its an ale yeast, so it isn't really lagered. I held it just above freezing for about four weeks before carbing. If you're not on a kegging setup, you'll need to add back a bit of yeast to achieve carbonation in the bottles.

    alot of malts have no recoverable starches, crystal malts and roasted malts, they can be steeped.     Myself, I would mini mash the munich and vienna with maybe 4 or 5 lbs extract. Bitter with the oz of hersbrucker and .5 oz tettnang at 30. It'll make a tasty session beer. If you want it sweeter, add 4-6 oz of the 80L Crystal. Keep in mind munich and vienna should really be mashed, not...

    I am about 1000% sure that it also illegal in the USA, freezing a fermented beverage, then removing the ice is, technically distilling, and is illegal. That is, if you were considering doing the same at home. Not to rain on the parade or anything.....:drunk:

    I dryhop my porter with willamette and it's awesome, if I do say so myself :D, never dryhopped any of those in an IPA though.

    Getting some books, any recommendations?

    Another vote for Designing Great Beers. Even after brewing more than 100 all grain batches, I still reference that book when designing a new recipe. It's a great book.

    50/50 pils and munich. Myself, I'd go for about 1.060, throw in enough fuggles to get about 25 IBUs at 60 minutes. Thats it, it'll be good! If you really want some crystal in there, toss in 8oz of C60 as well.

    When did you stop counting?

    Every single recipe I have ever brewed is in Beersmith, which I automatically backup when the program is closed to a backup file, then also uploaded to an ftp server I use so that I'll never lose it. I'm on batch 112, I just assumed everyone kept track of their brews..

    Sierra Nevada Torpedo. I go to the bottle store with full intentions of buying something else, and come home with the torpedo every time, that stuff calls to me.
