Adding DME one week after fermentation starts?

I added dark DME and 15 minute hops. I had a ton of krauesen after just a couple hours. The sample tasted tasted great. I think I get Some raisin flavor from the special b in the recipe. Whatever it is, it taste pretty good. The dark dme has some roast and black malt which my original recipe...

    English Brown Porter with Brett?

I'd love to hear how this sour cherry porter turned out. These were really interesting updates to read.

Soaking cocoa nibs and vanilla beans in vodka

This sounds great. I'm taking notes on these type of flavor additions and hope to brew something soon. Hope to hear more of your thoughts on the process and the flavor! :)

Adding DME one week after fermentation starts?

I might run the numbers and see what a tiny AG mash would look like, but probably will go DME. Been out of town and want to get this added as soon as i get back. It looks like the dark DME has a lot of the same ingredients i used. It would be fun to do a relaxed mash without all the overflowing...

Adding DME one week after fermentation starts?

Thanks for the reply islandlizard! Seems it'll be ok then. This was my first AG BIAB and was split between two pots. I did a ton of pre calculations but ran into a ton of newb problems. I thought I was under water by the end and was topping of the kettles. My 3.5 gallon batch became a 5...

Adding DME one week after fermentation starts?

Can I add DME one week after fermentation has started in primary? I added way too much water. Missed my OG of 1.089 and ended up with 1.052. I'd like to boil 2 pounds of dark DME into a baltic porter with some flavor hops I missed before to get a middle ground gravity of 1.072. Would...

Messed up Porter! -Need Ideas for Experimentation

I made a lot of mistakes on this batch and would appreciate some input for fixing and experimenting with this Baltic Porter. I'd like to secondary with some complementary flavors. The Problem Doing my 1st BIAB, I managed to severely miss my OG on Jamil's Baltic Porter. I think my...

What's the worst craft brew (commercial) you've had?

Well, it seems most people enjoyed the 12-12-12. For some reason the spices in this really got to me. I have had other holiday beers that I did enjoy. I remember thinking that the stout base beer was excellent though. I would try it again if I was offered.

What's the worst craft brew (commercial) you've had?

I agree with the guy 2 pages back about the Anchor Porter that I bought 2 weeks ago. It was so bad I really wish I would have just dumped it. It tasted and smelled sour. In must’ve been acetealdehyde, with maybe some buttery diacetyl. It had the off flavor of Budweiser X 10. Absolutely...

Your thoughts on "How to Brew" extract recipes

Thanks for the update. Interesting about the color changing over time. That's not something I would have expected, but it seems I have read that several times now. I went ahead with Palmer's Porter recipe, just modifying it a little bit to make it a bit bigger. It has been in primary for over a...

White Labs WL060 in a Robust Porter?

I will probably grab some dry yeast to stock for these occasions from now on. I decided to get the starter going and just brew it. Hope the lager flavors don't throw it off, but people always say RDWHAHB, so it's probably ok.

White Labs WL060 in a Robust Porter?

Will White Labs WL060 work well in a Robust Porter? My LHBS was out of Wyeast American Ale 1056 and when I was offered the WL060 American Ale yeast I thought, "Why not"? After some research, it seems the WL001 California yeast is the equivalent of the 1056. The WL060 American Ale yeast is...

Your thoughts on "How to Brew" extract recipes

When you guys say roasted barley, are you talking about the black patent in the Palmer recipe? I'm thinking about upping the rest of the recipe slightly for more alcohol and flavor but will keep the black patent relatively lower. I used Brewer's friend to calculate everything for my 2.5 gallon...

    What are you fermenting in?

I have a 3 gallon glass carboy which is perfect for my 2.5 gallon batches (and my weak arms). I also have a 5 gallon bucket that I plan to use for larger batches, or for 3 gallon batches which I will then put into my 3 gallon glass carboy for long secondarys. I think it's pretty versatile for...

    Super Agata Bench Capper

Good deal! I'm thinking about buying one myself. Bottling with the Red Baron bottle capper was easier than expected but I wouldn't mind bottling going by faster. Also, next time I might not be with two other people.

Too bad about the color. The pint glass looks pretty good though. I hope it tastes good. I also had to make a substitution for my steam beer clone. The LHBS only had Pilsner LME, instead of pale LME but said it should be fine. After running it through Beer Smith tools last night it looks like...

Your thoughts on "How to Brew" extract recipes

What has your experience been brewing the recipes from John Palmer's "how to brew"? Any favorites? Are they good recipes or are there better ones out there? I just finished brewing the Shay steam number 4 beer, Anchor Steam clone, and it smells and looks pretty good after 4 days in the...
