    Thanks for your replies. I will hold the mash at 148 for 90 minutes. I have the same thoughts as NealPerkins, that unmalted grains wont convert at mash temps. Can anyone help to explain?

    Thanks for the tips. We ended up uncapping and adding a few tablets to each bottle. Not the way we wanted it to go but hoping the end product is carbonated enough. It tasted great before we bottled.
