Making a Scottish wee, I have two yeasts, I need to pick one.

Title says it, which would you choose and why? Making a wee which will have a fairly high OG. I have some Nottingham that I harvested from a recent chocolate oatmeal milk stout I made. I spun a starter and it’s sitting in my fridge right now ready to go. I also have a dry packet of US-04...

    Utilizing kegerator when not brewing

Here is an odd question for all you guys... I don't do much brewing in the winter months. I can't brew inside and standing outside in -10 or colder degree weather is not my idea of a good time. So generally the tap runs dry until at least april or May when I can tolerate long periods of the...

    Way too bitter...

So I recently made a gluten free licorice IPA using anise and six (that's right) six ounces of hops. They were 3 oz glacier and 3 oz Yakima magnum. Working this thing out on brewers friend (with the schedule I was supposed to use.) it worked out at 100IBU exactly. I apparently screwed my...

    WHY do yeast produce esters?

So, being a science oriented person... Exactly what causes the yeast to produce esters? What's the reason? I guess I'm asking for a yeast pathophysiology lesson. Educate me....google sucks.

    How much is too much?

So...... I've seen so much in the way of 2 drinks/day is too much, 4 drinks etc. There's so much conflicting information out there. I feel like I drink a lot. But I've talked to others who seem to drink nightly too. I have a job, it's not like I let beer run my life. But there...

    Here's an actual recepie. Input?

Alright! So I finally plugged in some stuff into a calculator and came up with, what I think, will be my first viable partial mash. I copied and pasted this, so it's sort of a gigantic wall-o-text, but it's readable. Let me know what you guys think! Method: Partial Mash Style...

    I'm confused about late addition

So, in all my reading here, I'm still confused about something. Is it better to boil your hops in straight water for the alotted time, then add ALL the extract at knockout? Or... Should you do 1/3 at the beginning of the boil and 2/3 at knockout? Or 1/2 and 1/2? I've seen so many...

    Strange coloring.....

Well, I took a sample of my Belgian white, and while it tastes great and seems to be fermenting well...something confuses me. How do the manufacturers get that great pale canary color? Mine is orange. Like orange orange. It looks like orange juice. And quite frankly, it's not that big of...

How do you take samples from a plastic bucket?

So, I want to know how to get a sample from a tap less plastic bucket. I would think removing the lid would be a bad idea? But I don't see any other way. How do you bucket people do it? I can see how a carboy wouldn't be a problem since the neck area is so small.

    Just finished my Belgian white.

Well my 3rd batch is in the primary. This one was a Belgian white kit from Midwest. Here is my procedure. 1: boiled 2 gallons of tap water and set aside. 2: steeped provided grains for 30 minutes at 160 in 4 gallons. 3: brought to a boil, removed from heat and paddled in the LME. 4...
