    I am laughed at in my circles because I smell grapes with mine and that was only using lemon sugar water to make my starter. It is probably from the finings and it is very pleasant but still wasn't expected... I need to make the white grape peach wine!

    Awesome build! I read that some people install a small fan into their cooling chamber. Possibly to circulate air. is that necessary or you think you go out without if its a small enough chamber?

    The only deviation is that my total volume is higher than 5 gallons and that I didn't make or use an existing yeast cake from a wine. I made a starter with inverted sugar and a small amount if lemon juice.

    You could always try a small amount of food coloring. A few drops of red would do the trick. I don't think it would mess anything up.

    Okay. First transfer into a sanitized carboy. It's slightly carbonated and still working actively. The gravity reading was about 1.012/1.014. My question is should it look like this at the two week mark or am I way off? I have followed the recipe as closely as possible. I haven't added finings...

    We didn't do it. Call it lack of testicular fortitude or call it brewer's intuition, we just went with a slightly hoppier than normal American style wheat beer. Should be good but it does mean my to brew list just got a little longer.

    Remember that the prescribed wait time before pitch is there to allow for preservatives to break down a bit too. The contact with the air will help make sure that they aren't full strength when you pitch in your yeast starter.
