    It's so cool to see that this thread goes back 8 years! With only 4 or so years of brewing it makes me realize how much of a newb I still am.     @Beer-lord I do the same. When making water adjustments it often takes a long time for the salts to dissolve, even with vigorous stirring.

    Clone Beer Founder's Breakfast Stout Clone

    I hit 1.084 as well. This time through I left out the coffee and cocoa nibs although I may add the cold brew coffee and nibs at secondary. Last time through this beer came out so damned good I've decided to make it once a year. Cheers!

    5 gal apfelwein made with S-04, eager to see how that affects the flavor. 5 gal FBS clone. Last batch of this was my best brew ever. So both recipes came from HBT!

    10 gallons of Kolsch lagering in secondary for going on 4 weeks. Think I'll bottle on March 1st. Then I'll make a beer that I can turn around a bit more quickly, I'm sick of waiting.

    10 gallons Kolsch-inspired beer : vienna malt + some munich, tettnang for bittering and saphir at the end. Wyeast 1007 fermented at 57-58 for a week now slowly raising to about 63 and contemplating d-rest prior to a couple week long cold crash.
