    Just did this brew with a bit less honey (I'd like to have a few in a single sitting), and pitched 1028, I just had it sitting around, so it is an excellent use for it, methinks. We shall see how it turns out. Fingers crossed for no infections!

    Removing plastic labels?

    I got a few beers from UK, and they seem to have those apocalypse-proof plastic labels on them... I found that hot B-Brite works well to get them off. Soak in overnight in a cooler with hot solution and they peel off well enough, and little bits can be removed with a green scratch pad.

    Chai in beer

    For the chai tea mix, also check out Teavana. Their chai mix is the closest one to the middle eastern chais that I found available in US. If you are going for the sweetness, I would also consider clover/orange blossom honey, as that is how some of the folks do the sweetening, and it may work...
