    Belgian Dubbel with T-58?

    Apparently the De Struise Brewery uses T-58 in their Pannepot Quaddruppel, which is a pretty awesome beer. The brewers admit it here. I've never used T-58 before, but the De Struise Brothers know what they are doing so I'd like to give it a try.

    Distilled or RO should be okay for extract brewing since all the necessary salts and minerals are in the extract. For all grain brewing, you would need to add some minerals to make it suitable for the yeast and mashing.

    I was looking up a clone of the De Struiss Pannepot and I found out, from the brewer's themselves, that they use dry yeast to make the beer. They use Safbrew T-58 dry yeast. I was surprised to find out that one of the finest beers in the world uses dry yeast.

    Wheat brew advice... my first wheat

    I would not go with any flavor or aroma hops. Hops and fruit just do not mix well. For the hops, I would go with just one bittering addition and try to keep it low, probably less than 20 IBUs.

    Olive Oil instead of Aeration

    Bad beer... caused by wild yeast or old yeast?

    Also, pitching without a starter can cause an excess of fruity esters. Yeast release esters during the growth phase. If they have to grow too much, then the beer can taste fruity.
