    Thanks again for all the suggestions. I decided to go with a Russian Imperial Stout. I found a base recipe and added some new things like fresh roasted hazelnuts and honey. I'm also going to add some oak chips, since I've got 8 months to kill, I might as well throw in anything that works well...

    La Saison Noire Amere

    I have no idea. This was the 4th batch of beer I brewed and I just thought I'd remove the hops. Not sure if it makes a difference.

    I haven't seen this yet, but I've tried Pliny the Elder. Awesome beer. Seems to me though, that I remember reading on the bottle that this beer should be drunk immediately, no aged. I think it's because of he hops they use. I may be wrong though.

    Great point. Shame on me for not thinking of my wife's preference first! I think she would like a Saison, but I don't know if that does well over 9 months. A Saison would be nice to drink in September too. She's pretty open minded about beers. Give her a unique flavor and a good back story...
