3 gal of beer in a 5 gal keg?

I'm considering getting into kegging my beer and had a few questions. I typically only brew 3 gallon batches for a number of reasons. What I've found though is 5 gallon kegs are cheaper and easier to find. Any issues with using a 5 gallon keg and adding just 3 gallons of beer? I'm wondering...

    Best hops for a saison

I'm doing my first saison this weekend and I'm trying to figure out what hops to use. The one good recipe I found uses Fuggles which I don't really like. I'd like to stay away from the American hops as well for this one. Thanks for the help!

    IPA hops

I'm planning my IPA using Columbus, centennial and Simcoe hops. Columbus early for bittering, centennial for flavor then Simcoe late for aroma and I think dry hop with all three. I'm just looking for some feedback on if anyone has used this combo of hops. Thanks!

    Hop stand

I just read the article in BYO about hop stands. I was thinking about using this technique for my next IPA but wanted to see if anyone had any experience with using this method.

    What's your favorite hop?

Just curious on if you had to choose only one hop to brew with, what would it be? I gotta say that I love centennial. Love the lemony flavor you can get from it.

    Wyoming Beer Trade?

    Using Summit hops?

Does anyone have experience with summit hops? Going for an IPA and the brew shop is out of Simcoe and he suggested using Summit? I thought I'd use it early and at 30 minutes then go with cascade for an aroma addition then dry hop with both summit and cascade. Figured this will come out very...

    Brewing 3 gallons vs 5?

Does anyone ever just brew 2.5-3 gallon batches or just brew all 5 gallons? For myself I would like to do smaller, more frequent batches to increase turnover and try new styles/improve technique. I also don't have a lot of space to store beer once it's bottled so this might help.

    Water quality affecting beer

Anyone have any experience with brewing with hard water? My city has extremely hard water and every one of my brews (5 so far, all extract with some specialty grains) taste ok but I've noticed an off taste in each. Almost medicinal. I brew with 1 gallon of distiller, 2 gallons tap and then top...
