    Is there any reason I can't just use 5 gallons of apple juice and a dose of yeast, without adding anything else? Maybe a few cinnamon sticks, but that's it.

    Coffee porter

    You'll get far more surface area from grinding the beans, and consequently a lot more flavor. I did 3 oz of freshly ground coffee in my mocha stout, and it was intense. It was my first time adding anything at secondary and I didn't think to sterilize it, but I had no problem with it.

    Kofta kebabs

    Sanitizing coffee??

    And if you were going to use spirits to sanitize your coffee, I'd use vodka or everclear and just add the alcohol with the coffee so you don't lose any of the alcohol soluble flavors, but also don't introduce any oaky whiskey favors. Although an Irish whiskey coffee stout sounds awesome.
