Winter Seasonal Beer Great Lakes Christmas Ale Clone

Here is the exact extract recipe that I used last year. Like I said, I'd adjust the ginger down, but otherwise leave everything else the same. You won't get the color right, but I think that's inevitable. Adding most of the liquid extract late or at flame out might help. I did a full boil...

Winter Seasonal Beer Great Lakes Christmas Ale Clone

I brewed the extract version last year and agree with MMJfan. The ginger is too strong in the extract recipe as written. The color is also way off, but I think that's due to the liquid extract and I'm not sure there's much you can do to correct for it. Mine turned out dark brown rather than a...

Winter Seasonal Beer Great Lakes Christmas Ale Clone

I brewed up my batch of this last night. I badly miscalculated my boil off rate so I wound up with a gallon more in the primary than I wanted. I think this caused my OG to come in a bit low (1.070 rather than 1.077) so I added a bit of extra honey to the primary to boost the ABV. Hopefully...

Winter Seasonal Beer Great Lakes Christmas Ale Clone

My biggest problem with this has been that it's way too heavy on the ginger. I've actually brewed another beer with a much lower amount if ginger and same problem... Last time I boiled it for 60 minutes and left it in the primary. I'm wondering if this is the source if my trouble. Are you guys...

Winter Seasonal Beer Great Lakes Christmas Ale Clone

I starting thinking about this today. Building on the mistakes I made last time, I'd like to brew it again this year to be ready around early November when the real stuff hits the market. I just looked at the beer profile and the hops listed are Mt. Hood and Cascade. Maybe they've changed for...

Requesting a Double IPA recipe review

I ordered up all of the hops I need to brew this, just in case Mosaic does, in fact, sell out in the near future. I'm thinking about using 1056 for this. I know 1028 is more authentic to GLBC, but I already have 1056 on-hand and have had success using it in IPAs in the past.

Requesting a Double IPA recipe review

Jeremy_N, thanks for posting. I'm going to give this a try when the dog days of summer are over and the temperature cools down a bit. I've seen homebrew shops sell CaraMunich I, CaraMunich II, and CaraMunich III (from Weyermann). Any sense of which they sold you? That could contribute to the...

Class of 88` Imperial Smoked Porter clone?

I just had this beer tonight and it was pretty incredible. My best guess for making something similar would be to start with an Edmund Fitzgerald clone (there are a few good ones floating around) and ramp that up to 9% abv with the same hop schedule. The real wildcard is the smoked malt. It...

    60 Minute Belgian IPA?

I tried the swamp cooler method last summer and it didn't really work. I'm away from the apartment too much to consistently swap in new ice to keep the temperature down. In the end I wound up with a sub-par beer that was a ton of work and made a mess. Right now it seems like brewing the...

    60 Minute Belgian IPA?

Long story short... I bought ingredients to brew the 60 Minute IPA in Sam Calagione's Extreme Brewing book. Life got busy and I didn't get to brew it this spring. Now it's summer and I'm worried that I missed my window of opportunity. I don't have good temperature control in my small apartment...

Earl Grey IPA (using tea vs. bergamot oil)

My brewing partner and I made a variation of BrettV's recipe. We wanted an APA more than an IPA, and made some minor adjustments based on what we had available. 6 lbs. Briess Gold LME 1 lb. Briess Pilsen Light DME 1 lb. Weyerman Carahell 4 ounces flaked wheat 15 high quality Earl Grey tea bags...

Winter Seasonal Beer Great Lakes Christmas Ale Clone

The challenge, it seems, is that there's really no uniform thing as "1 oz of ginger". Weighing out ginger isn't like weighing out hop pellets and tossing them into the boil. The more surface area on your ginger, the more ginger flavor that's going to be extracted, and a little goes a long way...

Winter Seasonal Beer Great Lakes Christmas Ale Clone

I actually did read through the thread. There were a lot of opinions but there didn't seem to be much consensus on this question. When I cook with ginger I typically mince or grate it, so I figured that would work in this application. I was more fearful of overdoing it on the cinnamon. In...

Winter Seasonal Beer Great Lakes Christmas Ale Clone

Hi Folks. I brewed the full-boil extract version of this recipe. It's been in the bottles for about 5 weeks now. I tasted it alongside a Great Lake's Christmas Ale, and while good, it's quite a bit different. The main difference is that the Great Lakes is pretty well balanced, while mine was...
