    Culturing yeast from frozen fruit

Hey all, just a quick question. A friend of mine brought me strawberry tree fruits (not strawberries though, the latin name is Arbutus unedo). It's common for these fruits to enter spontaneous fermentation after some time. Here in Portugal some people make a spirit from this fruit's "wine". So I...

Grain Bill for american black ale

Hey everyone, I've been wanting to try to make a black ipa/cascadian dark ale/ whatever. The only commercial example I remember trying (besides one I tried years ago that I don't really remember) was brewdog's libertine black ale. I really liked that it was more than just an IPA with a black...

    Gose in Nordrhein-Westphalen

Hey everyone, I'm currently living in NRW (Aachen). Does anyone know where I can buy some Gose? I can't seem to find any GOOD Getränkemarkt/bottle shop in the area.

Wheat beer with only munich and wheat malts

Has anyone tried something like this? I would like to brew a somewhat maltier hefeweizen, but not to weizenbock strength.

    Diastatic Amber malt SMaSH anyone?

My HBS carries this malt (it's belgian I think). It can be used as 100% of the grist. Has anyone tried doing a SMaSH with this?

    Munich/Centennial Amber Ale SMaSH recipe

Hey y'all, I've never made a smash or used these ingredients, so I thought I'd brew something hoppy with a nice malty backbone. Here's the recipe I came up with, tell me what you think or what you would change: OG:1.053; FG:1.013; IBU: 36; Efficiency: 70% Yeast: US-05 Final Volume: 5 US...

    Repitching yeast slurry

I have a batch finishing up primary that i fermented with S-04, and I'm planning on brewing another batch two days after bottling that first one. Can I just harvest some of the yeast cake into a sanitized jar and then repitch some on my next batch (using mr. malty's pitch rate calculator)?

Mash in cooler + Bag in the bucket

Hey everyone, I'm about to make my second AG recipe. For the first one I used DeathBrewer's stovetop AG method, but with such a small grain bag as mine I found it to be too much of a PITA, it was hard to maintain temps, etc. So I thought of building a cooler mash tun. However, I'm brewing ~2.5...

    Pale malt substitute in APA

Hey everyone, I'm planning on brewing an APA on friday. I'm going to the HBS tomorrow but they've ran out of pale malt. I was thinking of substituting it with a 50/50 mix of pilsner and amber malts, do you think this would work? Here's the grain %'s: 33% Pilsner; 33% Amber; 23% Wheat; 11%...

Dry hopped brown ale - infected?

So my last batch was an ABA that I dry hopped (with cascade). I bottled it about 5 days ago, but now the top of the bottles looks a bit hazy. Could this be just a mini-krausen, combined with the hop oils, or could it be an actual infection? There isn't any clearly visible fungi though...

Anyone got an extract recipe for a hoppy brown ale?

I went to Singapore last month, and went to a great brewpub (Brewerkz in Clarke Quay, if you go to Singapore it's a must see) and they had an awesome brown ale (balestier brown ale, http://www.brewerkz.com/node/345). It tasted slightly roasty, had a nice body and great american hops aroma and...

Yes, another 'yeast at bottling' thread!

So I've had this milk porter/stout thingy in the secondary for about 6 weeks at around 61ºF room temp (for various reasons I wasn't able to bottle it yet). OG was around 1.045 and finished at 1.012, fermentation lasted about 10 days, and I used safale s-04. My question is, do you think I'll be...

Secondary for Vanilla Chocolate Oatmeal Stout?

I have had this on primary for 8 days and I was planning on leaving it there for about 15 days, then racking on top of the cocoa and the vanilla whisky extract and leave in secondary for 3 weeks (I won't be home during these weeks) Would this be too long? But since I've read stouts don't...

    Black Patent for color?

For my second extract brew I'm planning on making a simple APA, but since I'll have some extra black malt I thought it would be cool to tweak the color a bit (so a not so pale APA...). How much black malt should I use in a 5 gal batch just for color without adding noticeable flavor? I'll also...

    Help needed - Hops chart

Hey everyone, you probably know this chart already: http://hopschart.com/zoom.html Since my LHBS doesn't have a great variety of hops it would be useful for me to have a quick reference guide to hops substitution, so I decided to make my own based on this chart, since most hops subs charts I...

Extract first timer and recipe opinion

Hi everyone, I'm hoping to start brewing with extract soon, and have "designed" a recipe for my first extract brew. I used brewtarget, and it predicted something american stout-ish (according to OG, FG, color, ABV and bitterness). Homebrewing is somewhat unknown in Portugal (there are 2 HBS...
