    should I do sour mash for Berliner weisse?

    Pitched the WLP630 Sept. 12. Bottled January 2 to 4 volumes. 1.032 OG. So yeah I wouldn't call this a quick method. I have also done a version with us05 and wyeast 5335 lactobacillus pitched together with decent results but I preferred the white labs blend.

    I've used WLP630 and didn't do a sour Mash and had good results. I did a decoction Mash and no boil for the Berliner Weisse.

    Ya I think your right about that.... I also read that the pump has to be stainless if you plan to pump anything other than water and not get sick. One day I will have to clean it up and make some seltzer water though. I also might try to convert one.of the spare tanks to a mini keg for the beach

    The bottle of lorann oil was labelled "1 fl dram" or 0.125 fl Oz and I used the whole bottle for 1 gallon.

    Update: I used Lorann oils rootbeer extract and royal old fashion rootbeer extract and split my 2 gallons. The lorann oil one was very tasty. The royal one tasted not as good and experienced the particulate problem mentioned above and a ton of bottle sludge.

    I just started 2 gal of this last night. Added 2 Oz of caramel 120L (steeped for 20 minutes at 155f before adding the sugar and boiling) both jugs were bubbling away when I went to work this morning. :)

    I checked out that rig. A similar machine runs about 1200 Canadian around here. Would you expect to be able to weld a coupling to a keg or brew pot with yours?

    I did just bottle my first saison. I threw the yeast cake away but I could probably culture up some from my bottles.
