    Secondary for Hefe?

    Just keep it in primary for the 10 days and bottle, I am bottling a Weihenstephaner style hefe as we speak, brewed 10 days ago, not much you can do about the bottle conditioning process though...You can always crack one open and at least test it when they get there, if it seems carbed enough...

    Every beer is amber and clove/banana

    If you are brewing with extract, you could be scorching it resulting in a darker color. One way to combat this is using late extract additions. As far as the clove/banana smell goes, what yeast are you using?

    As we all know many of us home brewers are into making our own foodstuffs, cheese, jerky, raising chickens, gardening etc. Are there any of you out there that are into making your own hot sauce? I got a real nice food processor/blender base for Christmas and I had about 1lb of cayenne peppers...

    First Noob question about amount of Yeast needed

    Using the 15g packages of brewing yeasts are just fine, there isnt really any guideline for "too much yeast" (That I know of)

    Old black t-shirts are great to have around in the brewery, slip it over the carboy and there ya go, no light (at least for the most part)

    Im not familiar with that brew in specific, but there are a couple possible answers to your question. One answer is that it is possible the yeast that may still be in the bottle had been roused and no longer settled at the bottom, in other words resuspended into the beer so when you poured...
