    I bet pecan is great. It is my first choice for smoking bacon and BBQ. I have to order it. Maple may work if looking for mild smoke. I mix it with apple and hickory sometimes.

    Huh. Whooda thunk it would have taken a few gigs for a simple process. I use the hide on curing smoking process. Yours look half smoked which is fine. The moisture content is a bit high.

    No sweat. Rub with a decent mustard then re-rub with what you want. Apply smoke for a couple hours then finish with your choice. Keep it simple, it's pretty hard to go wrong.

    Eliminating Secondary Fermenter

    I'm so far behind it is frustrating. Market farming and all that goes with it. I did a citra IPA on the 9th and a centennial on the 10th and dry hopped on the 22nd. Cans are already and waiting so maybe tomorrow or Tues. No secondaries either for most house ales. There is just no point in it.

    Additions to add to basic ale

    Instead of cukes you may want to use borage or salad burnet. These are herbs with cucumber like flavor. It may work well with the basil tinture.

    Probably so if out of temperature range, yet the brewer has to watch for that. That is the operator error, improper use of the strain. It isn't a crime, just a mistake in using the strain. I wouldn't say it was bad temp control exactly, just for the strain it didn't work.
