How long until a Pelicile forms?

My first lambic is now just barely over 6 months old. Around 3 I saw impressive brett bubbles, but I really didn't see any sort of pellicle until I popped off my airlock to take a sample at the 6 month mark. It has a big thick white pellicle now. Honestly, it is a good sign if you don't have...

    Pellicle Photo Collection

Not the best quality photo, it is hard to get a good one with all of the krausen stuck to the carboy. My first attempt at a lambic, now 2 months old with wyeast lambic blend, cantillon rose de gambrinus and tilquin dregs. This just popped up in the last week or so.

Harvesting yeast from an old westveletern

Just buy WLP530 or WY3787 unless you are doing it for a fun project. Those are the same strains used by Westy. I would recommend reading BLAM if you haven't already, very interesting and can save you from trying to harvest something you can readily buy at your LHBS.

Critique my hopbursted pale ale recipe

I have been working on this one for a while, I am looking for a flavorful, aromatic pale with citrus, piney and floral notes. Here is my BIAB recipe: Hop Burst Pale American Pale Ale Type: All Grain Date: 11/19/2012 Batch Size (fermenter): 5.00 gal Ingredients Amt Name Type #...

bottle harvesting: how long do you give it?

I actually just finished up with a conan harvest. I got lucky and harvested from a less than 2 week old can, which definitely helped. Used a 500ml starter with the dregs from one can + yeast nutrient in addition to a stir plate. Didn't see much activity until the second or third day, but I now...

    ISO Hill Farmstead Juicy

lHello, looking for a bottle, or a couple of Hill Farmstead Juicy. I live in southern Missouri and have access to Boulevard, goose island bourbon stout, founders backwoods bastard as well as bolt cutter, some rarer stone beers (enjoy by, vertical epic ale) and possibly have a connection for some...

    ISO Hill Farmstead Juicy

Thanks for clarifying. I had checked the rules and didn't see anything specific about this, maybe I didn't read carefully enough. I've edited the post.

Not positive what you mean, but did I break a rule or something? I thought this was an appropriate post, please inform me if it isn't.

    ISO Hill Farmstead Juicy

Hello, fairly new here but I have traded before on other sites, namely reddit.com's /r/beertrade and /r/cigars. I am trying to locate a bottle (or a few) of Hill Farmstead's Juicy. I live in Missouri and have access to most of Boulevard's brews, and currently have a bomber of Saison-Brett...

First all grain- citra pale ale

With the higher AA, Centennial (from my experience) is a good dual purpose hop. I may add a half oz or so to a dry hop, but I like it as a bittering addition for sure.

    Orval clone bottling question

Thanks for all the help guys. I ended up bottling this a little bit earlier than expected because even with orval dregs in secondary in addition to brett in primary I hadn't seen a budge in the gravity for over a month. These are in the bottles now and looking great, I got a ton of activity from...

First all grain- citra pale ale

Awesome, I won't touch the grain bill at all. I was planning on making a starter, just wanted some other opinions. I will fool around with the hops a little bit more as well, I still just don't know enough about recipe design to know what I will like in it. Thanks for the help and advice!

First all grain- citra pale ale

Hey everyone- I am making the transition over to all grain in the next week and decided to start with a pretty straightforward American pale ale recipe. I am doing BIAB, so please keep in mind when critiquing the recipe. Let me know what you think- I am going for something light in bitterness...

    Orval clone bottling question

Based on what you did and what others have said, I am planning on carbing to 3.25 volumes using tastybrew, hopefully it will get up to 4.25-5 with the brett. Secondary question, do you think pitching a bit more orval dregs at bottling would help carb this up better? Not seeing much activity in...

    Orval clone bottling question

I'm planning on bottling in champagne and orval bottles, so 3 volumes it is! I am excited to see it as it ages- even my hydrometer sample had some great flavor to it, but none of the Brett is really poking out yet. Thanks for the advice.

    Orval clone bottling question

Hi guys, first post on HBT. I am currently working on an extract brew of an Orval-like clone. This is my first time using Brett, and my third homebrew. First, here is a copy of my recipe: 6 lbs pilsner LME 1 lb clear candi sugar 2 oz hallertrauer @ 60mins 1 oz styrian goldings @ 2 mins...
