    I'm about 5 gallons in the fermenter vs 5.75 like Beersmith predicted. Oh well, if the beer is good I'm fine with it. I have a lot of dialing in to do to get my AG's more predictable.

    My first AG last week, the mash OG was 1.039, was supposed to be 1.058. I boiled 90 min vs 60 and the the wort OG came in right on target at 1.071. Not sure if that was the right thing to do but it got the gravity up. We'll see how the beer turns out.

    I just bought and returned a BC 44 qt pot due to a pin hole in the side. Looked to be a manufacturing defect. Fortunately, I got it Amazon prime, so returning was not an issue even though I had already drilled a 7/8" hole for a valve. Besides the pin hole the pot appeared to be decent quality...

    Ok to hydrate yeast the night before?

    I'm no expert but on all the yeast instructions I've read say don't wait more than 20-30 minutes to pitch once the yeast is hydrated. It won't hurt the wort to sit a few minutes while you hydrate the yeast. Just be sure to keep it covered.

    Bayou Classic has a 44 qt pot that's pretty reasonable. Should be able to handle most 5 gallon BIAB batches. Just bought one on Amazon for around $85.
