    Hard Root Beer recipe

I just finished carbing a 3 gallon batch, followed recipie exactly and used fermentap root beer extract... The extract sucks. The malt base is great but be warned, I used almost a whole bottle of the extract and it still doesn't taste like a good root beer flavor. Not enough anise and licorice...

    Apple Pie Cyser

Just racked to secondary 3 days ago and it's clearing nicely(used 1122 yeast). It fermented dry .999ish and the hydrometer sample was great. Honey flavor, hint of cinnamon, apple flavor with a slight...very slight sweetness. I'm torn, May add AJ concentrate to secondary but then fermentation...

    Apple Pie Cyser

So a week and a half in and fermentation is steadily chugging along and has slowed dramatically this week. Going to take a gravity reading later. How long does this stuff take to clear? Also anyone keg? Was thinking about backsweetening a tad with honey then into the keg with a low charge of...

    Apple Pie Cyser

Following this recipie to a "T" with the exception of adding 1.5 tsp each of DAP and fermaid i just finished putting 3 gallons in primary. I'll report as we go:). Any news as to backsweeten vs. carb vs. sorbate and keg vs. etc?

    A great simple recipe

1.080? Wow, what juice were you using? Most commercial juices top out at 1.050(translation: I wanna buy some:) ). Lack of krausen is normal. Ocadsionally I'll get just a tiny thin layer of foam but more often than not I just get airlock activity. Nottingham should be able to eat a 1.080, may...

    A great simple recipe

Coming out of secondary it did a little but that goes away after a week or so in the keg. I let all my ciders and beers carb for 2 weeks before tapping the keg anyway. EC-1118 is a good yeast like that.

    Kegging cider and back sweeting

If you transfer to a keg, chill for 24 hrs then backsweeten then you don't have to worry about fermentation kicking off again. The yeast will go and stay dormant. I do the same thing with no problems. I also have a beer gun that I fill bottles with(great way to bottle cider), if I bottle I...

    A great simple recipe

SG 1.060 FG 1.005. Don't think, just do. I have another batch going and seriously can't keep this on tap longer than 2 weeks per batch. Each gallon of juice(I can only speak for tree top) came in at 1.50 even. EC-1118 works pretty darn fast and drops out to a clear cider equally fast. Never...
