    Chestnut Sweet Stout

If (hopefully when) I brew this again, I might actually add a little bit of cocoa and maybe up the coffee just a very small tad. There are already a few chocolate notes in the stout, but I think it might actually benefit from some more (bringing it closer to a mocha stout I suppose). That...

    Chestnut Sweet Stout

I actually did not have that experience. By the end of primary, there was maybe about an inch or so of trub at the bottom of the fermenter. Nothing too bad at all. I should note I grabbed my chestnut chips from Trails End.

    Coffee Stout

I would agree that 4 lbs of oats might be a bit too much. I just used 2 lbs of oats in a sweet stout that turned out great. I feel like the use of additional oats beyond that will lead to too many unfermentables from the oats. I think Igliashon reported as such in a recent post when he...

    Chestnut Sweet Stout

During the initial fermentation stages of my last chestnut-based stout, my AC unit busted and I lost control of fermentation temperatures pretty quickly (S-04 is a beast and warm winters in Austin, Texas are a blessing and a curse). Unfortunately for me, the resulting product was full of...

    Gluten-Free Holiday Stout - Suggestions

frothdaddy - From what I have read, 2 beans seems to be standard. Apparently using 1 vanilla bean does not contribute much flavor-wise. However, I have no personal experience as to how many beans to use. Based on the comments above, I have decided to make some adjustments to the recipe...

    Gluten-Free Holiday Stout - Suggestions

The 1/4 oz per bottle guideline helps quite a bit, many thanks. I am hoping to get 48 bottles out of this batch, so 12 oz should be spot on just as igliashon has said. This is perfect as I have a French press which makes exactly 12 oz of coffee. Igliashon - thanks for the advice on the...

    Gluten-Free Holiday Stout - Suggestions

Cross contamination is not as big an issue for me as it was right after my diagnosis, but it still is a problem. I will likely try to eventually malt my own grains, though this is something I do not plan to do for some time. The sticky from igliashon is enlightening. I learned about Clarity...

    Gluten-Free Holiday Stout - Suggestions

Thanks for the reply Muench. I keep hearing good things about chestnuts so that is why I decided to go that route. I am honestly not worried about the price tag if I can get a better quality final product. And thanks about the heads up on the oat malt. I am pretty eager to try oat malts (and...

    Gluten-Free Holiday Stout - Suggestions

Long time lurker, first time poster. Three years ago, I was hit with the Celiac diagnosis and my worldview turned upside down. I have tried pretty much every gluten-free beer I could find on the market in the US and in Europe, but I have not been pleased at all at the selection. Moreover, I...
