Struggling to know if my water is ruining my beer!!!

I've had problems where I created phenolics from sparging with water that was too hot, not adjusted below 6.0 pH or a combination of the two. Do you acidify your sparge water? If you are using it untreated and sparging with 8.9 pH water that could be the problem. When the pH goes above 6.0 it...

    I'm a Professional

Hell yeah! I wish you the best of luck. If you are ever in the Catskill Mountains in NY stop by Hammo's Brewpub and Lodge and ask for Ryan. BTW what is the name of your new venture?

    I'm a Professional

I took that ride. I started my pro brewing career by taking a chef/brewmaster position at the brewpub I am at. I hope you like long hours. I used to average 80 hr weeks between keeping the kitchen and taps running. Needless to say I burned out very quickly. Within 6 months. So, I took a pay...

Need direction in building a path to brewing 10 gallon batches...

Before going pro I was brewing 10 gallon batches using an 8 gallon MLT with HERMs coil and a 15 gallon boil kettle. I would mash inside on the kitchen counter with the HLT / HERMs on the stove. To control the temp of the mash I used a ball valve to bend the wort going though the coil with wort...

    Best Brewery Tour/Brewery jokes

If you don't already do it...start out with passing around samples of the raw materials. Have some samples ready of a base grain, a crystal grain, a dark grain and encourage people to eat them. Have a few different hop verities (ones that are as different as possible) have the guests rub them...

Help with AC wiring for Glycol Chiller

I think that one is supposed to attach to the compressor. Just make sure you have a ground going to both motors( compressor and fan).

    haze in fruit beer

I have made a strawberry blonde twice. The first time without pectin enzyme and the second time with. Both were hazy but the second one had a better mouth feel as I found the first one thick. I did not notice any difference in flavor. The second batch was served at my wedding and no one...

    Really Grape-y IPA - Nelson/Belma

I realize this isn't much help at the moment but if you can get your hands on some calypso hops they tend to have a grape aroma

Funny things you've overheard about beer

At the bottle shop waiting for a co2 refill. Girl: "I know this is a weird question but do you have and non alcoholic gluten free beer?" Worker: "If we did it would be back there "(pointing to the gluten free section) She looks around for a minute then asks another worker. Worker 2 with puzzled...

    Fermentation Restarted after Three Weeks

It sounds like off gassing to me since the FG isn't changing or isn't drastically changing. Off gassing can occur when temps and barometric pressure change.

    You may cringe

I don't see why it couldn't be done. I would imagine the store bought keg should stay on co2 since you will be creating head space in the keg as it empties. Since you will need a sanke coupler to get the co2 in you can run the beverage out line to a ball lock coupler and connect it to the...

Beer gas refills near Albany, NY?

I mistook beer gas for plain co2 so I'm not sure if Westmere does beer gas or only co2. But the guys at homebrew emporium are great I get all my grain from them and the tank exchange is pretty convenient.

Difference between flameout and aroma steep

To me the main difference is temperature. When adding hops at flameout the wort is still close to boiling temp so the volatile compounds (oils) are being driven off until the wort has cooled past the volatization temperature. Aroma steep I will usually cool the wort to 180 then add hops and...
