Yeast choice for semi sweet cyser

After brewing beers for 9 months a friend has asked me to make him a traditional "old world" mead for him. I found an interesting read... The Closet of Sir Kenelm Digby Knight Opened There are plenty of old mead recipes but most sound pretty gross, including a lot of spices that would not...

    Apfelwein Batch 2

Started my second batch of Apfelwein today. This time I used brown sugar, cinammon and Nottingham yeast. Last time I used table sugar and wine yeast. I think I'll also backsweeten it at bottling with Splenda (after tasting it first). The first batch was very dry. Let the rhino farts commence...

    Single 120v element options?

Starting to do my homework to build an eBIAB system. Would like to stick with 120v since I have 120v service in both the front and back of the house. Recipe help-American Barleywine

I just tried Old Knucklehead by Bridgeport Brewing in Portland, OR. It's got quite a sweet finish to it. Much different than other barleywine's I've had. Anyone have a recipe for this beer? Or maybe a suggestion or recipe for a beer like it that has a sweet dessert-like finish?

    Washing yeast-didn't separate

Tried washing yeast last week for the first time. Trappist High Gravity yeast. I did the first couple steps.....add sterilized water, swish around, pour into quart jars to let separate. The first washing, I got a little sediment in the bottom. Poured out clear liquid and saved the sludge but...

    First Starter-Learned something

I made my first starter yesterday with Trappist High Gravity. I couldn't find a large erlenmeyer flask for under $30 so I used an old 4 liter glass cookie jar. After sanitizing it well I put the starter in. Having read about the need to agitate and/or stir I did so a few times before bed last...

    Hallertau Substitute

So I need a substitute for Hallertaur Herschbrucker. All the substitution charts say to use Mt Hood. I thought I had read that Hallertauer Mittelfruh was bred to replace Hallettauer Herschbrucker because it was prone to fungus. So is the Mittelfruh a suitable alternative?

    Sour Beer-What happened?

My first SMaSH beer was going to be an English Mild Ale, Marris Otter and a mystery hop. I brewed it about 10 weeks ago and I didn't much like the flavor of it after fermentation so I was lazy and let it sit without dumping it. I tried it today and it is definately sour. It doesn't have any...

    Using flavor syrups

I know the brewshops sell small bottles of flavor concentrate, mostly fruit flavors. Can I use flavor syrups like what you would put in coffee? It's made with sugar but has some preservatives in it. If it is usable, is there a recommended starting range for adding the syrup? ie-1 cup per 5...
