    Bottles sticking to capper

    could be the brand of bottles too. on my wing capper, anchor steam and sam adams stick to mine, but sierra nevada do not. Rouge 22oz also snag. all my 12oz bottles are now Sierra Nevada or swing tops.

    First time bottling: Grolsch or cap

    i've used mine for at least 4 times without replacing the gaskets. Take them off as soon as you open the bottle, that gives them a chance to flatten out.

    Drying syphon tubing

    I whip both ends around over my head lasso style for a few turns, then hang it up in a U shape, open ends up on the shelf in the closet. I wedge the ends of the U into the boards on the shelf to keep them upright. This way, the evaporation can escape and the tube is usually dry in a couple of days.

    South African beer

    Not to be picky here, but Windhoek is from Namibia. It's brewed in the capitol, Windhoek, and Namibia was a former German colony, hence the good beer! When I was in ZA in '06, that was my favorite.

    2 or 3 gallon boils - cool all 5 gallons or cool boil first?

    Instead of the shower, I use the sprayer thing on the kitchen sink. It also generates a lot of O2 into the wort. I spray the thing with StarSan before I fill up the bucket too, to sanitize any potential bad things on there.

    Eamus, With that nickname, I'm assuming you're a cubs fan, and possibly live near Wrigley. There's a homebrew store near 94 that's good in a pinch for some quick supplies, near Armitage and 94. they have some sanitizers, go get some star san, it's the best.

    First brew bottle conditioning question

    How warm was the fermentation? I had my first two brews fermenting in warm weather (80's) and they both have cidery tastes. I'm going to dump them out. I'm confident that the high temp was the cause for the cider.

    vodka in my air lock???!!!!

    I used starsan in my last batch, a dunkelweiss, but it was creating such a squeaky sound out of the top of the airlock, I had to pull it off and switch it back to vodka. Sounded like a little mouse in the corner.

    Those hard to reach places...

    I also whip them around a few times to get the majority of the moisture out before using the above mentioned inverted U drying technique. Warning, watch out for the ceiling fan blades.

    Best Bottle Opener Ever

    I've got the same pair, plus another one, works perfectly. The opener never comes in contact with the bottle, only the cap. I use it all the time.

    Dunkelweizen require secondary?

    I'm going to bottle mine that was brewed on 12/31/07 on Sunday. Primary fermentation only, no secondary.

    cidery beer

    I have the same taste in my first batch of beer. I think it's the temperature. We went to the LHBS and brewed down at their site, and it was a warm day, mid 80's, last sept. The fermentation took place at the LHBS, and I'm not sure what the temps were, but I think they must have been a bit warm...

    Funky Taste in 3 different batches

    No, I'd say it's more like green apple (checked out palmer on that one, maybe a wild yeast, hence the bubbles in the IPA), but last night when having a Boulevard Wheat, I noticed same faint smell, turns out, Simcoe in that beer too. Could the simcoes be that pungent?

    First brew... potentially spoiled

    Check this mess out. Best batch I've made, so far (#1 out of 3 that I've been able to taste). The other two I've made, Brewer's Best IPA Kit and Homebrew Class at Bev-Arts both taste funky. I hope those 2 will taste better with age, but I'm not too confident...

    Sierra Nevada Harvest to be bottled!!!

    Had some last week in CA when I was back for work. Luckily, I'll be back again on Tuesday! Like the earlier poster said, not as much hops aroma as I expected (Goose Island Harvest was my comparison), but the complexity of the taste was interesting. I was excited to have my first "wet hops" brew...
